Chicken Fried Steak & Homemade Gravy
4 Cubed Steak
flour
egg
milk
vegetable oil
salt
pepper
cayenne pepper (optional)
garlic powder
worchshire sauce
some sort of cayenne pepper hot sauce
Chicken Fried Steak: In one large bowl, combine flour, salt, pepper,
garlic powder, cayenne pepper (to taste) and mix. In another large bowl,
combine 2 cups of milk, one egg, salt, pepper, cayenne pepper, garlic
powder, worchshire sauce and cayenne pepper hot sauce (to taste) While
you have 1/2 inch of oil in skillet heating up, dip steak in milk mixture,
then cover with flour mixture, and then dip back into the milk. Put steak
in oil and leave alone so it can form a crust. Leave for at least 4
minutes with the medium-high heat. Flip the meat and do the same for the
other side. After the crust is browned and the meat is cooked, place
steaks between layers of paper towels or brown paper bags to soak up
excess oil. Cover steak with foil to keep warm while making gravy.
Gravy Lower pan setting to medium without taking out meat drippings and
start to mix in flour mixture with the leftover oil to make a base for the
gravy. After all the excess oil is soaked up by the flour, using new
milk, slowly combine milk with the flour/oil mixture, stirring all the
time. Bring to a slight boil, turn it down, and let it thicken for three
minutes. Salt and pepper to taste.
