Fried Peanut Butter Chicken
1 tsp. salt
2/3 cup milk
1/4 cup all-purpose flour
1/2 cup peanut butter
1/8 tsp. pepper
2 1/2 to 3 lb. fryer chicken
3/4 cup dry bread crumbs
Beat together egg, peanut butter, salt, pepper and milk.
Coat chicken with flour, then with milk mixture. Coat with
bread crumbs. Place in ungreased, large, shallow baking pan.
Bake at 375 degrees until tender, 45 to 50 minutes. Do not turn.
Serves 4.
