Fried Cookies
All-purpose flour 1 1/8 cups, plus additional
Butter, softened 1/2 cup
Granulated sugar 1/3 cup plus 1 tsp.
Brown sugar 1/3 cup
Baking soda 1/2 tsp.
Salt 1/2 tsp.
Vanilla extract 1/2 tsp.
Egg 1
Semi-sweet chocolate chips 1 cup
Funnel cake batter, prepared 1 cup
Water 1 cup plus 2 Tbsp.
Powdered sugar 1/4 cup
Chocolate sauce 1 cup
Whipped cream 1 cup
1. Combine 1 1/8 cups flour, butter, sugars, baking soda and salt in an electric mixer until smooth. Mix in vanilla and egg. Fold in chocolate chips; mix until just combined.
2. Using floured hands, divide the dough into 20 (1-Tbsp.) balls; freeze.
3. Preheat fryer to 375F. Mix together funnel cake batter and water in a large bowl. In batches, dip cookie dough balls in the batter. Remove; shake off excess batter and drop balls one at a time into the oil, shaking the frying basket to ensure dough doesn’t stick to the sides. Fry 3 to 4 minutes or until golden brown.
4. Transfer fried balls to a sheet tray lined with paper towels. Dust with powdered sugar; serve with chocolate sauce and a side of cream for dipping.
