Peanut Butter Potato Salad
1 Tbsp. cider vinegar
2 Tbsp. peanut oil
1 tsp. tamari (soy sauce)
1/2 cup mayonnaise
1/2 cup peanut butter
(optional tsp of mustard)
salt & pepper to taste
6-8 potatoes, cooked and cut into chunks (about a pound) - still warm
3/4 cup celery, chopped
1/2 cup green onions, chopped (or red onions, or Vidalia’s)
Salt and pepper your cooked potatoes (still warm).
For the dressing, combine vinegar, peanut oil, and tamari. Add mayonnaise
and peanut butter - and mustard, if you’re using it.
Toss dressing with potatoes, celery, and onions. Chill for a couple of
hours before serving.
