Barbecued Squirrel

4 large Squirrel
7 slices bacon
1 cup Barfield Barbecue Sauce
water as needed
Put 4 slices of fat bacon in a large black iron Dutch oven.
Lay the squirrels on top of them and lay 3 slices of bacon on the top of the squirrel.
Add with Barfield Barbecue Sauce and cover.
Put them in the oven at 350F and let them cook until done.
Add a little water if needed to keep from burning.
Serve hot with some barbecue sauce on the side.
Barfield Barbecue Sauce
2 1/2 cups Worcestershire sauce
6 oz. water
1 med. onion
2 1/2 Cups ketchup
1/8 Cup sugar
1/4 cup dark molasses
1/2 Cup apple cider
4 Tbsp barbecue seasoning mix*
1/2 Cup prepared mustard.
Mix all ingredients in saucepan.
Simmer for 20 minutes.
Keeps well in the refrigerator for 2-3 months.
*Barbecue Seasoning Mix
6 Tbsp Salt
6 Tbsp course ground black pepper
3 tsp. ground cayenne pepper
6 Tbsp dark chili powder
12 Tbsp Paprika
6 Tbsp ground Cumin
12 Tbsp granulated Sugar
Combine all ingredients, mix thoroughly.
Place in jar with tight fitting lid, use as desired.
