Bacon Jam
I found this recipe at http://homesicktexan.blogspot.com/2009/09/bacon-jam-recipe-make-it-at-home.html and just had to try it out. I adjusted the original recipe to my liking though you can go to the original recipe from the link included.
1 pound of bacon
4 cloves of garlic, minced
1 whole sliver of onion
1 chipotle en adobo
2 teaspoons adobo sauce (from the can)
2 teaspoons cumin
1/2 teaspoon chili powder
1/2 teaspoon cocoa powder
1 cup of brewed coffee
1/4 cup apple cider vinegar
Black pepper to taste
I cut the bacon into small pieces and cooked it with the garlic, onion, and all the other spices until everything was done, but soft. I did not drain the grease. Then I pureed everything together until it had a smoothie consistency. It’s awesome on top of pork chops or scrambled eggs. Below is the original recipe.
